CloseThe modern grower-producer iteration of the Fleury domaine was founded in 1929 during the economic crisis that left vineyard owner Robert Fleury with many grapes and nowhere to sell them. Today the winery is helmed by three members of the Fleury family, Jean-Pierre who took over in 1989 and was the first to transition the vineyard into biodynamic growing practices, Morgane who also runs an ecological wine and Champagne bar in Paris, and Jean-Sébastien, an innovator experimenting with the use of horses, agroforestry, and other natural growing techniques. The 2008 Blanc de Noir is made from a special selection of old vine Pinot Noir that ages for 10 years on the lees, and receives a 2.5 g/l dosage. The Cuvee is complex with aromas of toasted almond, dried apricot, and a slight herbaceous note. The mousse is delicate, and on the palate there are flavors of baked apple and toffee, with a resounding mineral finish. Pair with Sea Bream Tartare with lime or a decadent Mille-Fuille for two!
