CloseThe 2013 Billecart Salmon Extra Brut is a classic and balanced blend of 62% Pinot Noir, 24% Chardonnay and 14% Pinot Meunier of which 85% comes from Premier or Grand Cru vineyards in Montagne de Reims, Côte des Blancs and Vallée de la Marne. The wine is fermented in stainless steel and aged on the lees for a whopping 89 months prior to disgorgement with a dosage of only 2 grams per liter, thus the designation extra brut. The result is an intense Champagne with subtle grapefruit and pineapple flavors and a whiff of raw almond followed by toasty, biscuit aromas from the extended lees contact. It’s very complex with fine bubbles, crisp acidity, distinctive minerality and even a hint of salinity. Well worth trying an adventurous, atypical pairing for this like Jaime Oliver’s Duck, Orange and Watercress Salad or Wild Boar Terrine with Porcini Mushrooms!
