CloseThis traditional domaine is born from the marriage of Vincent Bitouzet and Annie Prieur, both of whom represent dynasties of Burgundian winemaking. They continue their legacies today, practicing organic winemaking with their son François. This Pinot Noir is hand picked from their minuscule 0.13 hectare sliver of vines in Les Mitans, producing only 3 barrels, all of which are destined for the US market. The wine ferments spontaneously in stainless-steel tanks, remaining on its lees until assemblage then spends 12-16 months in 228L oak barrels, 20% of which are new. Before bottling, the wine is fined with bentonite, filtered with diatomaceous earth, and a minimal amount of sulfur is added. Its restrained nose hints at dark red cherry and crushed violets. This fresh dark fruit nose develops into cherry, plum, earthy underbrush, minerals, and delicate floral notes with balanced acidity. Firm tannins invite pairing with slow roasted goose dressed in a ginger, black currant sauce or portobello steaks topped with béarnaise.
