CloseThis honest, unpretentious 100% Cabernet Franc is crafted in a traditional, old school manner with no new oak from a single, one hectare parcel that’s entirely exported to the US. Harvested by hand and fermented in stainless steel the wine is then transferred to large 50 hectoliter, 60 year old foudres, where it rests for 18 months before bottling without fining or filtration. Beautiful white, black and green pepper notes surround a core of fresh, bright red cherry and blackberry fruit that’s just coming into it’s own at 10 years of age. Limestone and gravel minerality emerge with crisp acidity and moderate but firm tannins on the finish. Pairs wonderfully with charcuterie, lentil stew, roast duck or rabbit, or a Valençay Chevre.
