CloseThis delicate and well balanced Pinot Noir from the Cote de Nuit exhibits classic aromas of fresh cherry and strawberry with silky tannins and crisp acidity. As it matures, it should develop notes of leather, truffle and game. The wife and husband team, Natalie and Herve, the fifth generation farmers but second generation winemakers of the domaine, are intimately connected to their vineyards and practice sustainable farming. The grapes, from 50 year old vines, are hand harvested and destemmed, then sit in tank for 15 days, followed by a gentle pneumatic pressing to preserve the purity of the fruit. After fermentation, the wine is aged in oak barrels (10-15% new) for 12 months before bottling. This complex and subtle Pinot noir will pair well with duck breast, roasted pheasant or any soft, pungent cheese in the style of Epoisses, Langres or Soumaintrain. You can also serve it with meatier fish dish such as carp in red-wine sauce.
