CloseThis classic Right Bank Bordeaux blend of 60% Merlot, 35% Cab Franc and 5% Cabernet comes from various plots around Saint Emilion’s gently sloping hills and has been tended to by the Pueyo family since 1853. The received Ecocert organic certification in 2010 and began practicing biodynamic in 2017. After three weeks of native yeast fermentation and maceration, the wine is aged for 18 months in 25% new oak, 25% one year old oak and 50% in cement tank. The resulting wine effuses a spicy nose of coffee and tobacco; the palate blends flavors of ripe currant and cassis, pronounced wet stone and granite, and cinnamon bark on a long dry finish. Pair with a fennel and orange braised lamb shoulder or a savory mushroom and leek galette with fresh thyme.
