CloseEnvironmentalist André Hoffmann purchased the Jayer-Gilles Estate in 2017 and set out to improve farming and cellar practices in the service of purity and balance. This100% Pinot Noir is from 50 year old vines from several, organically farmed plots. Harvested by hand, the grapes are destemmed and fermented spontaneously in cement tank after a 10 day cold soak. Only produced in exceptional vintages, Cuvée Rosalie is a selection of three of the most promising barrels with élevage in a mix of one-to-three-year-old oak. All of this culminates into a delightful light-to-medium bodied pinot with crisp notes of wild red forest berries and dry chalky minerality that gathers before a long, savory finish. Pair with a juniper-rubbed roast duck or a handmade tomato galette.
