CloseThis 100% Pinot Noir comes from two tiny parcels of 35-45 year old vines on the Volnay side of Pommard totaling just 2/5 of a hectare that are farmed following the principles of ‘lutte raisonée’. De-stemmed and cold soaked for three to four days, fermentation then takes place with native yeasts in used barrels where the wine for 18 months before bottling. Though barely medium-bodied, it’s solid and sturdy when compared to a typical Pinot. Beautiful floral and herbal aromas give way to deliciously wild blackberry flavors on the palate. Earthy, dry tannins and balanced acidity lend structure. Pairs beautifully with roasted game birds, pretty much any chicken and mushroom dish or a nice medium-firm cheese like Morbier!
