CloseErnest Vineyards is a Northern Sonoma county Winery that focuses on cool climate production around Sonoma and the Mendocino Coast. Their Edaphos line represents wine made from varietals rarely grown in California such as this Carignane, most often grown in France. Produced organically, the grapes ferment in stainless steel before aging in concrete egg. This one is a touch funky, with a whiff of barnyard and anise followed by notes of overripe blackberries, a hint of mushroom, and a dry tannic finish. Pair this wine with rich poultry, like the Sonoma County duck breast grilled with black pepper; with fig sauce, haricots verts, chanterelles, and crispy potatoes, found on Chez Panisse’ rotating weekly menu.
