T.O., the flagship wine of Mr & Mrs Theo, is a biodynamic blend of 50% Grenache and 50% Syrah from two vineyards in the Drôme, just east of the Rhône River, one with sandy limestone clay soils and the other with predominantly granite pebbles. Maceration and fermentation with indigenous yeast takes place in fiberglass tank over 18 days followed by 18 months in stainless. The result is a rustic, natural Southern French red that emphasizes red and black fruits, while maintaining the character of their soils which impart spice, lavender, garrigue and an earthy minerality. Medium-bodied with balanced acid, moderate tannins and a whiff of funk, it pairs well with kebabs and caillettes (French pork and leafy green meatballs) or Le Saint-Nectaire, a nutty, slightly pungent, soft cheese from Auvergne.
