CloseBrother and sister, Luc and Lise are the seventh generation vignerons continuing the Pavelot family legacy in Pernand-Vergelesses. Their Pinot Noir is harvested by hand from their Les Cras vineyard. The grapes are carried to table sorting in traditional wicker baskets and 20%-40% whole clusters are cold macerated in stainless steel for 3-5 days. The grapes then undergo spontaneous fermentation in enamel lined, open, concrete tanks for 15 days. The wine ages in French oak (20% new) for 10 months before being racked twice and bottled. The nose leads with fresh red fruit, forest floor, and a touch of pepper. Light bodied with well-integrated tannins, the palate consists of cranberry, orange, clove, some oak and prominent earthiness. Pair with a juicy sumac roast chicken or a cauliflower and fontina cannelloni.
