CloseFounded in 1870, Domaine Sauger, nestled between the left back of the Loire and the Sologne forest, has been passed from father to son for five generations. This cuvée is made from 100% Romorantin, a local varietal only planted in Cour-Cheverny where it has fended off the encroachments of Chenin and Sauvignon Blanc that now dominate the region. Hand harvested at optimal ripeness and direct pressed with minimal maceration, the wine is vinified in stainless steel, temperature controlled vats. The nose is enticing, perfumed by a spritz of lemon with a hint of honeysuckle and salinity. Light on the palate, this dry white has a strong mineral presence with notes of bright citrus, guava and bitter almond. Pairs wonderfully with ginger sautéed scallops or charcuterie.
