CloseFirriato is a champion of Sicilian winemaking and ecological dedication. Founded in the 1980s by Salvatore and Vinzia Di Gaetano, it has since become certified organic and one of the first carbon-neutral wineries. This 100% Nero d’Avola comes from their best parcels of traditional, goblet-trained vines on the Dàgala Borromeo Estate which boasts deep, alluvial soils and a moderating, coastal influence. Hand-harvested during the third week of September, the juice ferments for ten days in stainless steel before spending six months in American barrique and another six months in bottle. The wine sports a rich nose of dark fruit, peppery spices and cacao. Full-bodied with moderate acidity, the fruit-forward palate of stewed black plums, dark chocolate, anise and clove followed by earthy, firm, dry tannins on the finish. Pair with a Kokkinisto (Greek-style tomato beef stew) or a parmesan-garlic delicata squash melt.
