In 2004, Lise and Bertrand Jousset founded their winery which spans 11 hectares of prime vineayrds in Montlouis and Touraine. Inspired by various revered vignerons, the Joussets trust their instincts to craft distinctive wines with a hands-off, biodynamic approach that allows each wine to express its own unique character. This unforgettable 100% Chenin Blanc may very well be their crown jewel. The grapes are hand harvested from eight small parcels of very low yielding 50-80 year old vines. The total production for this micro cuvée is a mere 150 cases per vintage, with only 15 destined for the US market. Fermented in used oak barrels, the juice undergoes a lengthy 22 month aging process on its lees followed by two more months in steel tank, hence the name “version longue.” The result is a complex wine that offers generous aromas of pear, quince, beeswax, and honey. The concentrated palate expresses notes of ripe white peach, orange blossom, and meyer lemon, that integrate seamlessly with bright acidity and a long mineral-driven finish. Lise and Bertrand recommend opening it two hours before serving and pairing with a local goat cheese like Crottin de Chavignol, fresh fig and endive salad, or a warm baguette with seafood rillettes and charcuterie.
