CloseFounded in 1980, COS is recognized as a benchmark Sicilian producer. Today, co-founder Giusto Occhinpinti leads the effort that’s dedicated to producing complex, pure, honest wines with organic and biodynamic practices that highlight their Sicilian terroir. Cerasuolo di Vittoria is a blend of Nero d’Avola and Frappato that dates back to 1607, eventually receiving DOCG status in 2005, the first awarded in Sicily. This particular cuvée is made from a harmonious blend of 60% Nero d'Avola and 40% Frappato. Spontaneously fermented with natural, ambient yeast, the wine is aged in Slavonian oak barrels for one year followed by another year in concrete tank. This medium-bodied red expresses a bouquet of black raspberry, dried violet, and anise. The gentle tannins and moderate acidity provide structure to the elegant palate of baked blackberry and dried cranberry with a touch of flinty smoke. Beautiful to drink now but has the potential to evolve over the next few years. Pairs well with Caponata or Sfincione, a thick, Sicilian style deep dish pan pizza with bread crumbs!
