Finca Sandoval changed hands in 2019 when Ángel García-Cordero purchased the winery and brought in the young winemaker Javi Revert who focused his attention on old vines, organic farming and vinifying grapes in a precise but low-interventional way. With this wine, he blended 70% of 80 years old Bobal vines along with 30% of four indigenous white grape varietals, including Moravia Agria, Rojas, Tortosi and Verdai. Hand harvested and partially destemmed, the grapes are co-fermentated and spend 10 months aging in clay Tinajas, per the traditions of the region. The field blend is a focused expression of Bobal with an overall black fruit and earthy profile. The nose expresses wild blackberry, fresh cherry, black olives, and dried oregano, while the palate is medium-to-light bodied with balanced acidity and moderate tannin. Try it with Fideuá, the hearty Valencian seafood dish with pasta instead of rice, or roast turkey with pomegranate glaze.
