CloseFounded by a band of four childhood friends, I CA RO is a collective natural wine project located just south of Rome. The group grows indigenous grape varieties on the volcanic soils of Castelli Romani, harvesting everything by hand and fermenting with indigenous yeasts. This selection is a blend of 60% Nero Buono and 40% Trebbiano/Malvasia. The red and white grapes ferment separately, with the whites seeing 24-36 hours of skin contact, before blending. Light-bodied and juicy, Operaio Rosso teems with dark plum and woodsy spice, alongside a tart kombucha funk. A streak of bright acidity settles into pronounced volcanic minerality and finishes with gentle tannins. Drink chilled! Operaio Rosso is the worker’s red, meant for daily hardships and convivial drinking. Maybe the perfect wine for stone soup?
