CloseFounded in 1983 in an old schoolhouse, L’Ecole No. 41 is a third generation family-owned, artisan winery in Walla Walla, Washington. Operated with sustainable practices, each lot of this Cab Sauv was hand-harvested at ideal ripeness and carefully crushed into 1.5 and 5-ton steel fermenters. Gentle handling of the fruit through hand punch downs and gravity-assisted movements was utilized throughout the winemaking process. The wine was racked into small oak barrels, 20% new, and aged for 22 months. Layers of dark fruit and espresso are accented by an array of floral notes, including violet, lavender, and crushed roses. With blackberry, cassis, roasted coffee bean, and a touch of vanilla on the palate, it’s framed with fine tannins which carry through to a long, flavorful finish. Enjoy this full-bodied Cab with a seared medium-rare ribeye or hardy oven-roasted root veggies like parsnip, turnip, beet and sweet potato.
