CloseL’Imparfait is a collaboration between Québécois restaurateur David McMillan of the legendary Joe Beef and a small winery in Prince Edward County called Hinterland. It’s a blend of about 63% Pinot Noir, 30% Marquette (an interspecies hybrid developed at the Univ of Minnesota in 2006), and 7% skin-contact Savagnin all of which are farmed biodynamically, harvested by hand, fermented naturally and aged in neutral oak without the addition of SO2 and bottled with its lees. It’s a stunning wine with subtle sour and smoke notes, fresh plum and wild berries. Light bodied and low in tannin, it benefits from a slight chill and can pair with anything from field dressed caribou jerky, Poutine or some artisanal Quebecois goat and sheep’s milk cheeses.
