Continuing his family’s legacy of over 80 years of winemaking, Pierre Richard is no stranger to the vineyard. This blend of Chardonnay and Savagnin from the heart of Jura represents everything that wine from this lauded region produces. With 40yr old vines that have been farmed organically since 2018, the grapes spend two days on their skins and then are soaked for 4 days before a spontaneous fermentation in amphorae, buried underground for 35 days. From there, it spends a year on the lees before being bottled with minimal sulfur. Expect delicate notes of apple blossom and subtle yellow flowers coupled with ripe white pear, baking spices, a kiss of saline and the slightest bit of tangy, kombucha-like fermentation funkiness to really round out this delicious skin contact wine! Pair this beguiling beauty with something equally intense, like Roquefort salad with pear, endive, chicory and walnut oil, or seared scallops with Jerusalem artichokes.
