CloseAt just over 1000 feet above sea level, the vines of Château de Roquefort grow on plateaus atop large limestone hills and steep rocky cliffs. Founded in 1995 by winemaker Raimond de Villeneuve, the biodynamic vineyard is currently run by his long-time protogé, Margaux Gentile. Guele de Loup, named after a native Mediterranean flower bountiful at the vineyard, is a blend of 80% Grenache with equal parts Cinsault and Cabernet Sauvignon. The grapes are hand harvested, 90% destemmed, and lightly pressed into steel tank where they ferment spontaneously for two to four weeks, then rest briefly in both cement tank and large oak foudre, before being bottled unfined and unfiltered. Medium-plus-bodied with balanced acidity, the nose offers notes of wildflowers, black cherry and a touch or barnyard funk followed by a firm, earthy palate with dark berry flavors and a hint of leather and black olive on the long, dry finish. Perfect with a bison-burger topped with cheddar and caramelized onions, or Conchiglioni pasta stuffed with ricotta and spinach in a garlic tomato sauce.
