CloseYoung couple Camille and Mathias Marquet manage Château Lestignac and its 70-year-old vines after inheriting the family farm in 2008. They pared down the vineyard to the best sites and introduced a combination of a diverse garden and livestock. Instead of machines, horses are used to work the estate. This helped them to develop a true polyculture, complementing their organic & biodynamic farming style. Spontaneous fermentation with indigenous yeasts are always used along with only a touch of sulfites at bottling. The Michel Michel is composed of a blend of 35% Sauvignon Blanc, 55% Sauvignon Gris, and 10% Muscadelle. It sees two weeks of skin contact before being aged in concrete tanks for six months. With flavors of citrus peel and a white tea note, this is a clean orange with a light to medium body and gentle tannins. Pair with a crab ravioli in a lemon butter sauce or with a creamier cheese such as Saint Angel.
