Cordero San Giorgio, is a modern winery situated upon an ancient Lombard estate. Siblings Francesco, Lorenzo, and Caterina, who come from a long line of Northern Italian winemakers purchased the 22 hectare property in 2019 and immediately implemented strict organic practices. According to Babylonian mythology, Tiamat, the dragon depicted on the label, is the mother of the whole cosmos, the primordial goddess of the oceans and salt waters. This 100% Pinot Nero is hand harvested from nine plots, all vinified separately. Some are de-stemmed but not pressed while others are fermented whole cluster. Cold maceration precedes temperature-controlled fermentation in stainless steel tank with short, daily pump-overs for extraction and flavor. The wine ages in French oak barrique and stainless-steel tank for several months prior to blending and bottling. Aromas of high toned cranberry and cherry are met with a green herbaceous palate and a hint of black pepper on the finish. Its bright acidity and medium-light body make this a perfect pairing with Casoncelli alla Bresciana (Italian stuffed pasta with sage, aged cheese, and nutmeg) or Piemontese braised chicken with mushrooms, peppers and herbs.
