Founded in 1950 and currently run by the third generation, Cheveau makes classic, textbook Burgundy and Beaujolais. This 100% Chardonnay comes from Le Clos, a single walled-in parcel of clay and limestone soil in the Macon. Harvested by hand, and gently pressed, the wine ferments in temperature-controlled stainless steel tank where it rests for eight months on its fine lees. Light-to-medium bodied with bright acidity, this is a clean, pure expression of Chardonnay with no oak influence that offers aromas of orange blossom and lime zest, a bright palate of citrus and stone fruit, as well as a touch of minerality on the finish. Try alongside Gougères with rosemary and thyme or a radicchio, arugula, walnut, and blood orange salad.
