CloseHarry and Celine Gozlan of Domaine de la Mongestine are intent on making unique natural wines with minimal intervention. The Domaine is situated on 120 hectares of diverse land including forests and meadows and of which only 40 are planted to vines. Having always farmed organically, that certification was a fait accompli but they went a step further and obtained Demeter certification for their biodynamic practices. Fermentation takes place with indigenous yeast before aging in stainless steel and amphora. The Bob Singlar Rouge is a blend of Pinot Noir, Merlot and Marselan with 8% Roussanne, a revered white varietal. It’s light bodied, super fresh with floral, honeysuckle aromas, that mingle with wild berries, bright crunchy red raspberry and red cherry notes, and brisk acidity. Perfect with a chill alongside a fried chicken sandwich with kimchi or a classic Quiche Lorraine.
