CloseAnother gem from Kermit Lynch, Domaine du Salvard, which dates back to 1898, is a textbook Cheverny, that’s crisp and elegant, but not quite as tart or puckery as a typical Loire Valley Sauvignon Blanc because it’s blended with 15% Chardonnay. Farmed sustainably via lutte raisonée, the grapes are pressed after a brief maceration and fermented for twelve days in cold, temperature-controlled, stainless steel tank, then rests for an additional 6 months on its fine lees. The nose presents aromas of lemon, sage and fresh cut grass. Off the bat, the palate brings a lovely tang with mouth-watering grapefruit and passionfruit flavors, herbal notes and limestone minerality. Pair with sautéed freshwater fish like perch or carp on a bed of fennel and orange or miso risotto.
