CloseUnculin is a dynamic blend of 70% Godello and 30% Doña Blanca from 60—100 year old, low yielding vines on sandy soils with clay and loam. All of the work in the vineyard and winery is performed manually with the use of gravity, minimal intervention, and no chemical inputs. The Godello undergoes 24 hours of skin contact prior to spontaneous fermentation with indigenous yeast in both stainless steel tank and large French foudres while the Doña Blanca, which adds body, fruitiness and complexity only sees foudres. The wine then spends eight months on the fine lees without stirring in stainless steel. Herbal and subtle melon aromas emerge from the glass followed by a solidly medium-bodied palate with tropical and stone fruit flavors, green melon and a dash of meyer lemon on the crisp, mineral-driven finish. Pairs well with grilled octopus or Potaje de Chícharos, a delicious Spanish white bean stew.
