CloseClément Baraut, an enologist and former wine consultant, turned his focus from winemaking to biodynamic farming in the early 90's. He experimented on rented land until 2007, when he purchased 2 hectares of 30 year old vines planted on volcanic soil, sandstone, and schist. A practitioner of low intervention in both the vineyard and cellar, Clément believes his grapes "deserve to be treated with empathy and left in peace." This light-bodied 100% Grolleau offers aromas of thyme and rose petal while the palate carries strawberry, wild flower, a hint of white pepper and refreshing but not tart acidity. Enjoy this wine alongside roast wild rabbit with pancetta and broad beans, or a roasted cauliflower salad with pomegranate and coriander.
