CloseIn the village of Gyöngyöspata of the mountainous region of Mátra, tunnel cellars long abandoned by the locals have found new life as a workspace for winemaker Mátyás Páger. Farming organically on the volcanic slope of Csátberek, Mátyás hand harvests and vinifies without additives. With only 400 bottles produced, this 100% Gruner Veltliner (locally known as Zöldveltelíni) is aged one year in amphora under flor before resting in bottle with no sulfur added. Layered zesty minerality on the nose is complemented by gentle oxidation. Medium bodied, the palate offers round red apple, poached pear, and key lime pie, tied together with lifted acidity. Pair with Túró (fresh cow's milk cheese made), or Gombaleves (wild mushroom, pasta, and cream soup topped with fresh parsley)
