Mario, Salvatore’s son, currently runs the winery with his wife Rita and their children Massimiliano, Elisabetta and Mariantonietta who represent the 4th generation. After a soft, gentle pressing, the must is fermented in temperature controlled stainless steel tank. This 100% Vermentino, which has become synonymous with Sardinia, has a delicious balance of silkiness, refreshing acidity and subtle minerality. Floral aromas, fresh honeydew melon, and herbal notes that suggest grass and thyme. Try it with a Sardinian sheep cheese or Fregola (small balls of toasted Sardinian pasta) with saffron, clams, tomatoes, and parsley.
