CloseIn 2021 the Costanzo Family began a painstaking renovation of the dormant 19th century Palmento Winery and cellar, bringing it back to its original form and function. Their rosato is a pure expression of organic 100% Nerello Mascalese, which is hand-harvested and cold soaked for 8 hours prior to fermentation in stainless steel tank with indigenous. The wine ages on its fine lees for 4 months followed by another 2 months in bottle. The nose is a veritable garden party with violets, strawberries, and herbs. The palate includes a medley of fresh red berries, crisp acidity, a hint of saline minerality, and a clean, refreshing finish. Pair with scallops on spring pea risotto or curry grilled vegetables on polenta.
