ClosePas de Problème is a fresh, fruit-forward Pinot Noir that is hand-harvested from 30-year-old vines in and around the ancient town of Enserune in the Languedoc region of Southern France. The vineyards are planted on undulating slopes of clay and limestone that are similar to the soil types of Burgundy and farmed sustainably. Fermentation is spontaneous with native yeast, then aged for 9 months in stainless steel, unfined and unfiltered. Driven by aromas of raspberry and wild strawberry with hints of mocha, thyme, and rosemary, this is a balanced wine with moderate acidity, silky tannins and earthy minerality that pairs well with honey garlic chicken breast or pearl couscous with leek and butternut squash.
