Ribelle is a fresh, light, zero zero sparkling Barbera rosé that was conceived by third generation winemaker Camillo Donati because his beloved Barbera grapes were becoming too ripe and powerful. As a way to rebel against the effects of climate change, he harvested some of his vines three weeks early. The fruit is direct pressed followed by spontaneous fermentation, without the skins in stainless steel, and then continues in the bottle where the CO2 is trapped for your drinking pleasure. Vibrant and lively with fresh wild strawberry and pomegranate flavors, Ribelle is great on it’s own as an aperitif but can wash down spicy fare like Szechuan Braised Beef Noodles or a MaPo Tofu rice bowl with chili oil.
