Guillaume Demoulin, a fourth-generation winemaker, crafts this Tavel from 60% Grenache plus small amounts of Clairette, Syrah, Cinsault, Mourvèdre, and Bourboulenc. Tavel is the only AOC in the southern Rhône dedicated entirely to rosé but what differentiates it from Provençal, and most other rosés, is that some of the grape must is required to spend time on its skins before being blended back into the lighter must, resulting in a darker, more tannic and more food friendly rosé. Aromas and flavors of wild strawberry with a hint of thyme are framed by crisp, balanced acidity and subtle, earthy tannins which make this a perfect pairing for olives and hard cheese, bbq sausages, or an herb-crusted, Provençal poulet.
