Bombisch is an unfiltered, zero sulfur Riesling from Domaine Binner, a titan of Alsace, dating back to 1770. Christian took over the reins in 1999 and doubled down on the traditional farming methods that were passed down by his father and grandfather by converting to biodynamics. The grapes are direct-press and fermented spontaneously, which offers a complex yet refreshing profile. Medium bodied with bright acidity, the wine has a slight funkiness upon opening which quickly gives way to an intense bouquet of juicy peach, mango and lemon peel, with a touch of salinity on the finish. Pairs beautifully with Pad Thai, papaya salad, and roasted salmon with harissa.
