Founded in 1898, Domaine du Salvard is now tended by the Delaille brothers, Emmanuel and Thierry, with a hand from their father, Gilbert. Light, fresh and easy-drinking, their rose is a sustainably-farmed blend of 65% Pinot Noir and 35% Gamay. The juice comes from 70% saignée and 30% direct press with no malolactic fermentation and aged on its fine lees in stainless steel tank to preserve its crisp, zippy acidity. Aromas of fresh strawberry, tangerine, and basil fill the glass. The palate boasts bright tart cherry, citrus zest, racy minerals and herbaceous charm. Pair with grain bowls or grilled zucchini topped with goat cheese and pine nuts.
