Led by Sonia Raimbault with the help of her children, this domaine is comprised of over 40 separate plots of Sancerre, in and around the village of Sury-en-Vaux, that have been passed down for thirteen generations over the course of four centuries! This 100% Pinot Noir rosé is a beautiful representation of the limestone abundant terroir and mineral driven style that one expects from a pale, dry, classic French rose with just a touch more body and flavor than its Provençal counterpart. The grapes are harvested at peak ripeness, gently pressed and fermented in temperature controlled tank to preserve every bit of freshness. Subtle wild berry aromas and flavors with a dash of grapefruit and nectarine lead to flinty minerality on the crisp, clean finish. Pairs beautifully with a Caprese salad, salmon Donburi, or a sweet, creamy and tangy strawberry-rhubarb Choux pastry.
