CloseLa Staffa, a practicing organic winery devoted to Verdicchio, sits among the vast rolling hills of Marche where the hot Mediterranean sun is tempered by the 400 meter altitude. Grown in rich clay and limestone soil, the grapes are picked and immediately pressed into concrete and steel tanks where they ferment with indigenous yeasts and age sur lies for six months. Rather than using sulfur, the tanks are left outside over winter for natural cold-stabilization. After a rough filtration, the wine is bottled. With zesty acidity and a slight waxiness, this wine offers aromas of peach skins, while the palate shines with clean notes of underripe stone fruit and a touch of herbaceousness. Pair with Brodetto (Italian fish stew) or creamy lemon squash risotto.
