Pirouettes, the brainchild of renowned winemaker, Christian Binner, is collective of organic or biodynamic growers in Alsace that makes soulful, natural wines at fair prices. All of the wines are made in their respective cellars by the winemakers themselves and whose given names appear on the label. The Eros wines are all skin contact whites, thus Eros de Raphael - an enticing blend of 35% Riesling, 30% Gerwurztraminer, 25% Auxerrois, 20% Sylvaner that’s harvested and sorted by hand, de-stemmed, macerated and co-fermented on the skins for 10 days with indigenous yeast and no sulfur added. Medium-bodied with balanced acidity, the nose offers aromas of rose petal, lychee and stonefuit while the palate delivers tangy citrus flavors and a dash of kombucha followed by stony minerality on the dry, subtly tannic finish. Pair with crispy skin roast goose or grilled mint and peach salad with goat cheese and walnuts.
