PANK (Pálffy Attila Nemes Köveskál) is the natural wine project of Attila Pálffy, 7th gen winemaker in the village of Köveskál, north of Lake Balaton and an homage to his days as a bassist for a Hungarian punk band. This 100% Syrah Pet Nat, from predominantly limestone and basalt soils that are farmed organically and follow biodynamic principles, is whole cluster pressed, fermented spontaneously with native yeasts in stainless tank and bottled with zero sulfur. The wine is not disgorged, resulting in a slightly cloudy but vibrant and lean Pet Nat with fresh wild berry and watermelon flavors, persistent bubbles and crisp, if not quite piercing acidity. Serve cold as an aperitif or with chocolate cake for dessert.
