Champagne Chavost is a small cooperative led by young winemaker Fabian Daviaux in the commune of Chavot-Courcourt that produces wines with no commercial yeasts or any additions such as sulfur within one of the French wine regions most resistant to the natural wine movement. Their Blanc D’Assemblage is made from 50% Chardonnay and 50% Pinot Meunier, that undergoes spontaneous alcoholic and malolactic fermentation and are bottled with no fining, filtering, or dosage. The result is a vinous, bone-dry Champagne with medium plus body, chalky minerality with notes of green apple, a little red cherry, and a touch of caramel.
