This, like all Mezcales de Leyenda, is 'campo a copa' (field to glass). Mezcal de Leyendas Maguey Tobala Oaxaca is crafted by Maestro Aarón Robles, who learned the trade from his father-in-law. The Tobala agaves are sustainably grown and distilled on a mountainside only reachable by a three hour horse ride from the nearest village. Less than 2% of certified mezcal production is made with Tobala, which can only grow from seed and thrives in rocky, cliffside environments, making large-scale production nearly impossible. Aromas of honey and desert wildflowers meet a palate of cooked agave and briny olive, finishing with dry minerality.
