One of the oldest distilleries in Basque Country, the grandson of the founder went to study whisky making techniques in Scotland. Instead of smoking grains with peat they use Basque heather roots imparting a unique green smoke profile. Ibar is distilled in a historic Hervé & Moulin copper pot still and then aged in freshly re-charred Iberian oaks casks. Integrated smoke and soft leather on the nose and a palate of sweet grains and baking spices make this delightful to drink solo. Also blends well in a Highball, or a classic Whisky Sour.
