CloseCoyote, a member of the Agave Americana family, is a solitary species that prefers to grow far away from other Agaves, yet it grows in abundance on San Baltazar Guelavila’s large open lands. The fibers extracted from Coyote’s leaves can be used to make rope, and its quiote, the flowering part of the agave responsible for its reproduction, can be dried and used to construct roofs, walls, and fences. When distilled by Grulani, it makes for a beautifully complex Mezcal– delicate, fresh, and light while also angular and piercing, with pronounced herbal notes and lean minerality.
