Agave Convallis, known colloquially as Jabalí, is a scarce species that grows only on hard-to-reach rocky mountain sides. It is notoriously difficult to distill into Mezcal due to its complex sugars that foam during distillation, and must be harvested from the wild. Its character is eccentric and rich, with notes of caramel and red spice with an herbal, dry finish.
