Dating back to 1898 Jacopo Poli is the undisputed Grandmaster of Grappa with an actual museum to its name. His grape-based distillates are gorgeous, with a complexity and subtlety that have elevated this spirit from its humble, rustic roots. Made from the pomace, essentially the leftovers from the wine making process, the PO Aromatica is distilled in a copper still from Gewurztraminer grapes (aka Traminer in northern Italy). It’s crystal clear with fairly intense flavors or pear, lychee, orange peel and rose hip. Fabulous digestif to warm the soul on a cold winter night.
