CloseKokoryu brewery is located in the Fukui province, which is known as Japan’s ‘snow province’. The melting snow from the Hakusan mountains to the east, eventually forms the Kurzuyugawa river - translated as nine-headed dragon. The subterranean river flow, naturally filtered by rocks, is what gives Black Dragon its exceptional purity and freshness. With a 55% polish ratio, this exceptional Junmai Ginjo is brewed in the Noto style; yeast is brewed in colder temperatures resulting in a slower process which yields intensely flavored sake. A complex nose of saltwater taffy, jasmine tea and honeysuckle welcome a clean precise palate of guava and melon followed by saline minerality on the crisp, clean finish. A versatile sake, it pairs well with sashimi, soba noodles or even Waygu.
