Shiro was introduced by the Masumi Brewery in Nagano to replace Yawaraka as their ‘Sake Matinee’, a slightly lower alcohol (12%abv) sake but with a higher polish ratio of 55%, which qualifies it as a Junmai Ginjo. It’s texture is silky with a rather subtle tropical sweetness and wild plum notes that beg the question of how these enticing aromas and flavors emerge in a sake whose only ingredients are only rice (Miyamanishiki and Yamadanishiki), water, yeast and koji. Incredibly versatile, this sublime Sake pairs well with a wide range of foods like Chirashi, Tempura, Tonkatsu or Ramen.
