Manzanilla is a fino sherry made frrm the Palomino Fino grape that’s matured in cask in the seaside town of Sanlucar de Barrameda, where the finest flor develops to give the wine a tangy, briny, slightly oxidized quality while inoculating it from further oxidation. This virtually 'fruitless' wine, the finest and lightest of all fortified wines, is an excellent selection for Scotch drinkers as well as a perfect aperitif with nuts, hard cheeses, olives, anchovies, cured meats and salty nuts.
