CloseFounded in the village of Courteronin in the Aube in 1895, Champagne Fleury has a storied history of innovation. In the early 1900's Emile Fleury was among the first to graft Pinot Noir onto American rootstock following the ravages of Phylloxera. In 1929, following a steep decline in grape prices, Robert Fleury (son of Emile) was among the first in Champagne to bottle under the family name as a recoltant-manipulant or grower-producer. Then, in 1989 Jean-Pierre (son of Robert) was the first in Champagne to convert to biodynamics. Their rosé de saignée is 100% Pinot in which the lighter, free run juice is bled off early to make a pale, elegant Champagne. The result is a round, medium-bodied bubbly, with notes of wild strawberry and crunchy cranberry backed by hints of alpine herbs, fine, persistent bubbles and crisp, well-balanced acidity. Pair with roasted beet, goat cheese and fennel salad, Sole Meunière or a rich, flourless chocolate ganache cake.
